Oatmeal Muffins - By Shannon Hastings

 

2 cups old fashioned Oatmeal, finely ground in food processor or blender

1 tsp. baking soda

2 tsp. baking powder

1 cup blueberries

1 cup chopped walnuts

½ cup unsweetened applesauce – or- 2 pears cooked and mashed (sweeter than applesauce!)

1 egg

½ cup almond milk or coconut milk

 

mix all ingredients together. The right consistency is if you can get a spoon to stand up in the batter for a few seconds before falling over.

Bake at 375 degrees for about 20 minutes in muffin tins. Put a toothpick in the middle to test it.
